🧾 Ingredients:
🐖 For the Pulled Pork:
- 1 pork shoulder (also called pork butt), 6–8 lbs
- ¼ cup yellow mustard (binder)
- ½ cup pork rub (your favorite or use salt, pepper, paprika, garlic powder, brown sugar mix)
- Wood pellets (hickory, apple, or cherry recommended)
🍖 For the Sauce:
- ½ cup Smokin’ Ts Original or With a Kick
- ½ cup Sweet Baby Ray’s (or other Kansas City-style BBQ sauce)
🥬 For the Slaw:
- 3 cups shredded cabbage (green or a slaw mix)
- ½ cup shredded carrots
- ¼ cup mayo
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- Salt and pepper to taste
🥪 For Serving:
- Soft sandwich buns
- Pickles (optional)
👨🍳 Instructions:
🔥 Smoke the Pork:
- Prep the pork:
Trim excess fat, leaving a thin cap for moisture. Coat with yellow mustard and then generously apply your rub. - Preheat smoker:
Set your pellet smoker to 225°F using hickory, apple, or cherry pellets. - Smoke low and slow:
Place pork shoulder on the smoker, fat cap up. Smoke until the internal temp reaches 165°F (about 6–7 hours). - Wrap and finish:
Wrap pork in butcher paper or foil. Return to smoker and continue cooking until internal temp hits 203°F. - Rest and shred:
Let the pork rest for at least 30–45 minutes. Then shred with forks or meat claws, discarding excess fat.
🍯 Make the Sauce:
- Mix sauces:
In a bowl, combine Smokin’ Ts and Sweet Baby Ray’s in a 1:1 ratio. Warm slightly and mix into the shredded pork to taste.
🥗 Make the Slaw:
- Toss and chill:
Mix mayo, vinegar, sugar, salt, and pepper. Toss with cabbage and carrots. Chill for 20+ minutes for best flavor.
🥪 Build the Sandwich:
- Assemble:
- Toast your buns if desired.
- Pile on sauced pulled pork.
- Top with a generous scoop of slaw.
- Add pickles if you’re feeling extra.
🐽 Why It Works:
The smoky pork is complemented by the bold, tangy-sweet blend of Smokin’ Ts and Kansas City BBQ sauce. The slaw cuts through the richness with a creamy crunch. It’s the perfect balance of savory, smoky, sweet, and tangy—all in one bite.
