(a.k.a. The Comeback Loaf)

Meatloaf has taken a lot of heat over the years. Dry. Bland. Served in weird gelatinous slices by cafeteria workers who definitely hated you. But guess what? It’s time for redemption.
Enter: Smokin’ Ts Meatloaf. Moist (sorry), flavorful, and covered in a glossy glaze that’ll make you wonder if you’ve ever really tasted meatloaf before. Spoiler: you haven’t. Not like this.
🧂 What You’ll Need:
- 1 lb ground beef (or mix with pork/turkey if you’re feeling fancy)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 small onion, finely chopped
- 1/4 cup Smokin’ Ts (for the mix)
- 1/3 cup Smokin’ Ts (for the glaze)
- Salt, pepper, garlic powder to taste
- Optional: a little grated cheese inside because you’re dangerous
🔥 How to Make It:
- Preheat oven to 375°F. Line a loaf pan or shape freeform on a parchment-lined sheet (if you’re wild and unboxed).
- In a large bowl, mix everything but the glaze sauce. Use your hands. Get weird with it.
- Shape into loaf. Bake for 30 minutes.
- Remove, slather on that extra Smokin’ Ts, then bake another 15–20 minutes until the glaze bubbles and caramelizes.
- Let rest before slicing, unless you enjoy molten meat lava (no judgment).
🥄 Serving Suggestion:
Serve with mashed potatoes, roasted veggies, or just a fork and your best “don’t talk to me, I’m eating” expression.
