Whether you’re snowed in, hungover, or just emotionally attached to melted cheese (same), this is the meal that hugs you from the inside. And then high-fives you.
🍅 What You’ll Need:
For the soup:
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cup vegetable or chicken broth
- 1/4 cup Smokin’ Ts
- Salt, pepper, and sugar to taste
- Optional: splash of cream or half & half
For the grilled cheese:
- 4 slices thick bread (like sourdough or brioche)
- Butter or mayo (for the outside)
- 1 cup shredded sharp cheddar
- 1 tbsp Smokin’ Ts, mixed with the cheese or spread inside
🔥 How to Make It:
Soup:
- In a saucepan, sauté onion and garlic in olive oil until soft.
- Add crushed tomatoes, broth, and Smokin’ Ts. Simmer for 15–20 minutes.
- Blend with an immersion blender (or leave it chunky if you like texture).
- Add cream if you want to feel luxurious. Taste and adjust.
Grilled Cheese:
- Butter or mayo the outsides of the bread.
- Spread cheese + Smokin’ Ts mixture inside.
- Grill in a skillet until golden, melty, and completely impossible to ignore.
